Having a strict gluten free and dairy free diet means I need to look for alternatives to my favourite meals and desserts. Ice cream is one of my favourite desserts and this one ingredient ice cream, which is not only dairy free but also sugar free, quickly become one of my favourite things to eat. I love that its so simple and easy, I can make it myself and I can mix it up by adding certain ingredients for taste.
Try it for yourself! All you need are just some frozen bananas and a powerful blender to blend them in. I have tried making it with a Nutribullet and I would not recommend it as the frozen banana gets stuck at the top and becomes difficult to blend. A better, and probably the best option would be to use a food processor. This has given me the creamiest and smoothest bananas.
How to make frozen bananas?
You will need about 4-5 fully ripe bananas, the more brown spots the better, this will make the ice cream super sweet and tasty. Peel each banana and cut them into small pieces. The smaller the pieces the easier it is for the blender or the food processor to blend the frozen banana pieces. Once all the pieces are ready place them into an air tight container and freeze them over night or until completely frozen.
How to make banana ice cream?
Once the bananas are completely frozen they are ready to be blended in the food processor. Blend the bananas until they are super creamy. If it’s difficult to blend you can add some coconut water or nut milk to help. I chose to add a little splash of coconut water, you may add any plant milk you desire. It may take some time, so be patient and it’ll get there 🙂
Once it is all blended and creamy, you can transfer it into an air tight container or cake tray. Place it into the freezer for at least an hour before eating it. This will allow the creamy mixture to set.
When you remove it from the freezer you can eat is as it is or you may wish to put some toppings such as fresh berries, nuts or maple syrup. If the ice cream is too hard, let it sit at room temperature for about 10 minutes before eating.
You’ve got yourself a smooth and creamy 100% natural ice cream which tastes so delicious.
Try adding different types of frozen fruits such as frozen raspberries, frozen strawberries or frozen pineapple to give the ice cream a different flavour and colour. My favourites are combining frozen strawberries with the frozen bananas in the food processor for some delicious strawberry ice cream. I also love adding frozen pineapple to some frozen bananas with a squeeze of lemon juice for lemonade ice cream. You can also try adding a handful of coconut flakes into the mixture before placing it into the freezer. YUM!
